Ingredients

Ingredients for Malpua:

120 grams sprouted wheat flour
1/2 tsp cardamom powder
1 tsp roughly pound/crushed fennel seeds
1/4 tsp Baking soda
a few strands of Saffron
230ml Milk (or water)
Chopped Pistachios and edible flowers for garnish
Ghee/oil (for shallow frying or deep frying as per your preference)
Sugar syrup

Sugar syrup ingredients:
1/2 cup sugar (100 grams)
1/4 cup water (60 milliliters)
1/4 teaspoon cardamom powder
1/4 teaspoon lemon juice (prevents crystallization)

How to Make It

Organic Sprouted Buckwheat Flour

In a saucepan, combine the sugar and water.

Heat the mixture over medium flame, stirring occasionally until the sugar dissolves completely.

Add the cardamom powder and saffron strands.

Bring the mixture to a boil, then reduce the heat and let it simmer for about 5-7 minutes until it thickens slightly and reaches one string consistency

Add the lemon juice to prevent the syrup from crystallizing. Remove from heat

To Prepare Malpua:

In a mixing bowl, combine the wheat flour, fennel powder, cardamom powder, salt, saffron, and baking soda. Mix well.

Gradually add milk to form a medium-thick batter.

Heat ghee in a fry pan for shallow or deep frying as per your preference. Traditionally malpuas are deep fried.

Pour large spoonfuls of batter into the hot oil.

Cook over medium flame, splashing hot oil over the malpuas as they cook.

Flip and cook until golden brown. Remove from the pan and add straight to the sugar syrup (Give a quick stir to the sugar syrup before adding malpuas)

Keep them soaked in syrup for 5 to 10 minutes, then remove and serve in a platter garnished with nuts and flower petals
